Our Class

What You'll Do

 A typical day includes: 
 
  • Tour a farmers market in Montecatini Terme to shop for seasonal ingredients and learn about locally grown produce. We visit a historic pasta shop where for 70 years it’s been making the finest pastas by hand.
  • Il Mulino: A short scenic trip through the Tuscan countryside brings you to Il Molino, an historic family mill, home to our professional grade kitchen. 
  • Cooking Class: Under Chef Giuseppe’s guidance, you prepare a multi-course Tuscan menu featuring local olive oils, cheeses, seasonal produce, and more.
  • Tasting & Pairing: Enjoy tastings of high-quality extra virgin olive oils and local pecorino cheese as part of the learning.
  • Shared Meal: The class culminates in sharing the dishes for lunch that you’ve prepared around a beautifully set table with paired wines and Prosecco in a gorgeous dining room that once housed the olive press.

Sample Menu

Depending on the season, menus might feature:

  • Tuscan salads & crostini, zucchini blossoms with mozzarella
  • Ricotta gnudi with ragu, seasonal risotto, artichoke tortino
  • Osso buco gremolata, 
  • Torta della nonna, panna cotta or zabaglione for dessert

 

We offer vegetarian options and always accommodate personal allergies and preferences. Non-alcoholic beverages offered as well.


Included in the class fee:

  • Market Tour
  • Transportation between Montecatini Terme and the Olive Press Kitchen
  • Olive oil and Pecorino cheese tasting
  • Preparation of a multicourse menu with instruction from our professional chef
  • Four-course meal with paired wines
  • Prosecco, bottled water, Italian espresso
  • Take home: a recipe booklet, custom apron, and certificate of achievement
 

Additional information: Class runs from 9 am to approximately 3 pm. Minimum class size 4, maximum 12. The class is geared for adults, though we can, on occasion welcome younger guests by prior arrangement.

2026 Class Fee: 150 euros.
At this time we do not accept credit cards. Payment in cash is due on the day of the class.

There is a direct train from Lucca to Montecatini Terme or from Florence Santa Maria Novella station to Montecatini Terme station. If driving, follow Google maps from your location to Montecatini Terme Centro station. Do not hesitate to contact us directly for travel advice to the meeting place in Montecatini Terme.

Travel to and from the Olive Press Kitchen is by taxi, arranged in advance by Chef Giuseppe. If you are driving to Montecatini Terme on your own, you will be able to follow us from the market in Montecatini Terme to the Olive Press Kitchen.
